Meal prepping!

So for the first 3 weeks we had family bringing us meals on Tuesdays and Thursday's (and some other random days too)!! Sounds simple enough right?! We could not have been more grateful. Most of the times they would last a few days and it was incredibly helpful. On the days where we had eaten through everything we were totally scrambling at the end of the day and most of the time just didn't eat because we were too tired or slammed a bowl of cereal.

We are slowly easing into reality this week with Chris headed to work half a day on Friday so I decided it was time to do some meal prepping with freezer meals. We just bought a chest freezer this past week figuring with 3 kiddos it's going to come in handy so at the 3:30 feeding on Saturday morning I scoured the Internet for the easiest freezer meals I could find. We ended up freezing 15 nights worth of food with each night enough for at east 4 total dinners with possibilities for lunch leftovers on some. The meals were mainly focused around chicken which we get at Costco. All in for the recipes I will share below plus weekly groceries (milk, eggs, bread, coffee, yogurt, cereal, etc.) I spent $150 at Aldi and $20 at Costco on Chicken! Crazy right?!?! So here are the recipes we made and froze. It took us both about an hour and a half start to finish to prep, cook and clean up and thankfully all 3 kiddos slept at the same time long enough for us to do it!

And then I just threw together s box of pasta, a jar of organic marinara (Aldi has the best and super cheap!), and a pack of turkey sausage for a quick and easy baked penne!

And voila - there you have it. Most of he recipes are relatively healthy and the majority are slow cooker recipes you throw on in the morning and forget about! I plan to serve most with some fresh veggies to make it a little more well rounded and healthy! If you have any questions send them my way!
